I love to cook beans with a ham hock or smoked turkey and various shredded vegetables, but sometimes there is just no time for all that work. This is a super easy beans and rice recipe that you can whip in about 30 minutes from start to finish.

This is great as a side dish or stuffed into tacos or burritos for added fiber and protein.

Ingredients
  • 1 cup long-grain rice
  • 2 tablespoons extra-virgin olive oil
  • 1 small onion, diced
  • 1 (15 ounce) can black beans, red beans or white beans or 2 cups home- cooked beans
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
Directions
  • Step 1 In a saucepan, bring the rice and 1 1/2 cups of water to a boil over medium-high heat. Reduce the heat, cover, and cook according to package recommendations.
  • Step 2 In a medium pot, heat the oil over medium-high heat. Add the onion and cook for 3 to 5 minutes, until softened.
  • Step 3 Reduce the heat to low, add the beans, salt, and pepper, and cook for 10 minutes. Add the rice and cook for 10 more minute. Serve.
