Sweet Potato Fries Made Easy

Sweet potato fries are super simple to make and are an excellent source of carotenoid antioxidants. While they are sweeter than the white variety, sweet potatoes can actually help stabilize blood sugar levels and be beneficial in improving your body’s response to insulin.

Give yourself at least 45 minutes to get them cut and cooked before mealtime and you will have a wonderfully tasty and healthy accompaniment to your dinner.

Sweet Potato Fries    

  • Sweet potatoes (orange, yellow or white flesh), cut into 1/2-inch strips
  • Olive oil
  • Salt
  1. Preheat oven to 425 degrees F.
  2. In a large bowl, toss the sweet potatoes with enough oil to coat. Arrange on a baking sheet in a single layer.
  3. Cook in oven for 20 to 30 minutes, until the fries are softened and browned to your liking.
  4. Sprinkle with salt and serve.
