Eating fruit is an important part of a healthy diet, but doing it everyday can become, well, boring. This is when the berry salad comes into play.

Bright and light, this simple salad is perfect for breakfast, lunch or dinner. Both adults and kids can get behind it. It’s great (and most affordable) when the berries are in season, but you can buy the berries fresh pretty much year-round at larger stores.

The salad is pretty simple and easily customized, so please, play around with it to your own tastes! If you have blackberries, add them. Strawberries, boysenberries, sure!

I have kept a couple mint plants on my windowsill or in my garden for years for this specific salad. They have grown into so much more, and I still snip off leaves now and again for this easy treat that instantly transforms you to a summer state of mind.

Make this an hour or two in advance to let the flavors meld before serving.

Ingredients
  • 2 tablespoons freshly squeezed orange juice
  • 1 teaspoon honey
  • 2 cups blueberries
  • 2 cups raspberries
  • 1/4 cup torn mint leaves, loosely packed
Directions
  • Step 1 In a medium bowl, whisk the orange juice and honey together.
  • Step 2 Add the berries to the juice. Add the mint leaves and mix gently. Serve immediately, or refrigerate for up to 4 hours.
